  • 1 large chicken breast, cubed and cooked
  • 2 tablespoons oil
  • 1 cup frozen peas and carrots
  • 1/4 cup diced onions
  • 1 tablespoon garlic cloves
  • 2 eggs, beaten
  • 1/4 cup soy sauce
  • chopped fresh cut green onions, optional for serving

So, I just want you to know that I opted for frozen peas and carrots because they are LIFE SAVERS. I don’t particularly like the canned version for this recipe, but if that is all you have then go for it.

Make sure you continue to cook until everything is heated through. Here is a pro tip. Sometimes, if I don’t have time to make chicken for dinner, I get one of those rotisserie chickens at the grocery store and shred it after removing the skin. All the work is done for me!

If you don’t feel like making chicken for this dish, you could either grab one of those rotisserie chickens or use whatever leftover meat you have in the refrigerator. Anything works in this rice recipe.
