No matter what kind of salt, according to the source of salt, it can be divided into sea salt, well salt, alkali salt, pond salt, cliff salt and so on.
But in terms of particle size, there are 2 kinds of table salt: sea salt and refined salt, which are the salt we usually eat the most, what is the difference between them? Is it just the size that is different? In fact, they are quite different, so it is recommended to figure it out before buying.

1, the source of salt is not the same
Sea salt, as the name implies, is salt made from seawater. The processing of sea salt is very simple: seawater is introduced into the salt fields, and after sunlight and evaporation, the salt is crystallized and precipitated when it reaches saturation. Sea salt does not have any additives, it is a natural salt that retains the nutrients in seawater, such as many minerals.
It includes coarse salt, fine salt and flake salt in various forms, except that when we talk about sea salt nowadays, we usually refer to the kind of imported coarse salt with large crystals in ground bottles.
Refined salt is refined salt, which is table salt obtained by purifying and refining raw salt, generally refers to fine salt, which is crystallized and precipitated again after removing impurities, and there are almost no impurities, so the trace elements in seawater are also removed.
The source of refined salt may be sea salt, well salt, lake salt, pond salt, cliff salt, there are very many sources, and all of them can be made into refined salt after deep processing. Some special table salt are refined salt, such as low sodium salt, iodized salt, nutritionally fortified salt, etc., which are all ingredients added later.
2、Nutrition is not the same
As mentioned above, sea salt is the salt obtained from the evaporation of seawater. In addition to water, all other components of seawater are left behind, containing a variety of minerals, including potassium, magnesium, phosphorus, zinc, iron, iodine and so on, all of which are beneficial to the human body.
However, seawater also contains some heavy metal elements, such as lead, mercury, cadmium, chromium, etc., are harmful to the human body, although the content is not much, but often eat it will accumulate, which is not good for the body, so long-term consumption is not recommended.
The refined salt has been refined and processed to remove impurities and is divided into 3 grades, superior grade salt with impurities less than 0.7% and first grade salt with impurities less than 1.5%, so there are no substances harmful to the human body and can be eaten with confidence, suitable for long-term consumption as table salt.
The absence of impurities means that refined salt has a purer taste and no strange smell. Although it is said that there are less trace elements, the difference in nutritional value is not much, after all, no matter what salt, the main component is sodium chloride. And even if sea salt has more minerals, it is not advisable to try to replenish minerals by eating salt.
3, the use of different methods
The purity of sea salt is relatively low, so the taste will be slightly lighter compared to refined salt, that is, it tastes less salty. Because it contains minerals such as potassium, magnesium and phosphorus, it has a certain fresh flavor, which is more suitable for salt baking, grilling, or for pickling food, such as pickled sauerkraut, which gives the food a special flavor.
Fine salt has a wide range of applications and can be used in basically any cooking style. It tastes slightly saltier than sea salt and can be used for frying, stir-frying, cooking, deep-frying, baking, steaming, etc.
There are 2 special kinds of refined salt, namely iodized salt and low sodium salt, which should be specially explained.
Iodized salt: mainly for residents of iodine-deficient and iodine-poor areas, while non-iodized salt should be purchased in areas with high iodine levels.
Low sodium salt: It is a kind of healthy salt, in which 70% of sodium chloride and 30% of potassium chloride can improve the balance of sodium (Na+), potassium (K+) and magnesium (Mg2+) in the body and prevent high blood pressure, which is suitable for middle-aged, elderly and hypertensive people to eat.
When you see this, you should already understand that if you are using salt as a daily long-term consumption, you should still buy refined salt. Only in special cases, such as pickling, salt baking and other practices, such as salt baked chicken, will use sea salt, do not eat the wrong.
