On the second stop of our Gansu trip, we arrived at Min County.
Minxian County is under the jurisdiction of Dingxi City and has a very advantageous transportation location. It is located in the south of Gansu Province, the middle reaches of the Tao River, is located in Dingxi, Tianshui, Longnan, Gannan geometric center, 212 national highway, 306 provincial highway through the territory, since ancient times it has the reputation of the Long "dry dock".
To Minxian County is actually to go to the Wolduan Wetland Grassland, because of the itinerary, we need to stay overnight in Minxian County. In the evening, we were recommended by our local friends to experience the special food of Minxian County - Beef Ga Noodle Slices.
After a long journey, it was almost eight o'clock at night when we arrived in Min County. My friend took us around the county and came to the not so spacious "Xinhua Street". Xinhua Street is all about selling beef and mutton noodles, which is really a local specialty. Our friend recommended us to go to what is said to be "the most authentic beef noodle restaurant in Min County". And this restaurant, even the proper store name and signboard are not, only locals can find.
Before coming, we mistakenly thought that Minxian beef noodle piece is similar to Lanzhou beef noodle. As a result, we came to know that the two cuisines are still very different.
Minxian's beef Ga noodle slices, the noodles are more special in the first place. When mixing the noodles, only lye is put in (some will put in a small amount of salt), and then the noodles are kneaded until the surface is smooth, then divided into 15 cm long, straight through 3 cm noodle stick, with a layer of oil on top, and put in a basin. When slicing the dough below, flatten the stick and pull it into long strips, then pull it into 2 cm square pieces and cook them.
The beef bacon is prepared in advance, and when it is time to eat it, it is divided and cooked in a pot, and then various condiments such as spicy oil are added to the bowl, poured into the soup, and served with noodle slices and beef bacon. Finally, sprinkle with cilantro and green onion, and a steaming bowl of beef Ga noodle slices is ready to be served.
Our group of friends, both northerners and southerners, all raved about the beef noodle slices. The meat and soup were so strong that they were captured by the tongue as soon as they entered, and they finished a big bowl in a few bites. I even drank most of the soup, truly very much to my appetite.
Our friend told us that the production process of Minxian Beef Ga Noodle Slices has been selected for the protection of the Non-Foreign Heritage List of Dingxi City. In the local area, people also love to eat this kind of noodles. Especially when the local people are married, beef Ga noodle is also an essential food on the table.
Minxian Beef Ga Noodle Slices are not expensive either, the regular ones cost $8 a bowl. We asked for the special one, 20 yuan a bowl, with very much beef. The little ones said it was worth it.
The owners are a young couple after 90 years, it is said that they inherited their father's craft and hope to continue this traditional cuisine. The owner proudly told us: their small store can have an average income of more than 5,000 yuan a day, and when there are many people at noon, it is necessary to wait in line to get a seat to eat.
Although it is said that a thousand people have a thousand tastes and many mouths. But on my personal experience, this special food is still quite delicious. If you have the opportunity to come to Minxian, Gansu, we recommend that you try it!
